    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • The facility did not have a food contact surface sanitizer in use. To prepare a food contact surface sanitizer from bleach, mix 2.5ml (1/2 tsp) regular household unscented bleach with 1 litre of water. This may be applied using a spray bottle, or using a rag and bucket. Regularly replace this solution to insure that it has an adequate concentration of active ingredient.
    • 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (a) the food establishment and equipment are maintained, cleaned and sanitized;
      • The mechanical dishwasher in the kitchen did not have detergent at the fill indicator line. Address this issue before returning the mechanical dishwasher to use.
