      • Ice buildup was found on the shelves of walk-in freezer. The operator has indicated that repairs are needed for the door due to incomplete sealing. Please ensure that the door is repaired promptly to prevent ice buildup.

      • Food items were stored on the floor in the walk-in cooler and walk-in freezer. Staff was asked to send a picture after placing it in the shelves.

      • A batch of chicken was left at room temperature after marination. Staff indicated that it had been out for less than an hour; therefore, PHI advised them to place it in the cooler and informed them about the dangers of keeping poultry at room temperature for extended periods.

      • The wall inside the cooler especially around the fan unit was moldy.Ensure this is cleaned to prevent mold growth on the walls inside the cooler.** Sept 25, 2023, Operator suggested to do the cleaning overnight

      • Thermometers missing from some of the coolers.Operator replaced the thermometers in the coolers during the inspection.Ensure all the refrigeration units have appropriate thermometers.

      • Packs of boneless chicken was found thawing in the sink. Operator was advised on proper thawing by either cold running water, overnight in the cooler, or microwaving and immediate cooking. PHI measured the temperature at 6C. Operator agreed to put them back in the walk-in cooler.

      • Build-up of dirt or dust noted on the ceiling tiles/vents and upper walls above the cooking line in some areas of kitchen. Ensure these vents are thoroughly cleaned.
