    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): Raw meat cooler, end where fish are displayed measured above 4°C. Meat cooler at end of aisle 10 measured above 4°C. Corrective Action: Continue temperature logs, monitoring at least every 4 hours. If temperature reading high during regular monitoring: • Check cooler at least every 1-2 hours, or more frequent (especially for raw meat cooler). • After 2 hours, move to another cooler to maintain 4°C or colder. • After 4 hours, the product must be discarded. General overstocking, which may impact temperature control of displayed food. Corrective Action: Ensure retail floor coolers are not overstocked. Air flow must be able to reach all products to maintain temperature control. Specifically, dairy cooler where cheese is stocked needs attention. Review all coolers and be aware of overstocking when new products are received.

      • Observation(s): Handwashing station at produce processing area is blocked by other materials. Corrective Action: Handwashing station must remain accessible at all times. Staff area handwashing sink not appropriate to use for food preparation area, as handwashing must be accessible without barriers (such as doors). Designated hand sink at area must be used. Ensure all staff are aware of hand hygiene procedures and sink usage.
