      • Fried baked goods in the hot box were measured around 38C. Crean sandwiches in the cooler were measured around 8-12C. Fried baked goods in the heat lamp were measured around 42-58C. Curry in the crockpot was measured around 55C. - Crockpot was turned to max, able to hot held above 60C. - ice or ice packs required to kept foods cool during transportation. sandwiches moved to the reefer truck. - Food must be over 60C before putting into the hot box, food moved to the reefer truck, and microwave prior to keep in hot holding. - Heat lamp foods were microwaved to minimum 74C before hot holding again.
