- ** - improper use of an ice bath observed: high-risk foods such as cut vegetables were stored at room temperature on a wire mesh and not in contact with the ice below. The food item must be all the way into the ice, surrounded by the ice to ensure proper temperatures of less than 4'C is maintained.
