- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- A ready-to-use surface sanitizer was not prepared and readily available during food operation (corrected).
- 09. Are chemicals stored and handled in a safe manner?
- Oxivir Plus was used on food contact surfaces. Oxivir Plus is not safe to be used on food surfaces and must be thoroughly rinsed. Please use no-rinse quat sanitizer provided.
- 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
- 1) The walk-in freezer was very dark. Staff stated the light bulbs needed to be replaced (staff corrected).2) Kitchen floor in a few areas was damaged making easy cleaning difficult. Please repair/replace so floor is smooth, nonporous and easy to clean.
- 22. Are utensils and equipment maintained in a condition and a manner that ensures the safe handling of food?
- 1) The condenser unit in the walk-in freezer was leaking and frozen condensate had accumulated on foods stored below. Please relocate food away from under leak and repair the unit so it no longer leaks. 2) There was an accumulation of old/dried food debris behind the blade of the electric slicer. Please thoroughly clean and sanitize.3) The drainage line under the steam table was leaking. Please repair.
- 23. Is the facility maintained in a clean and sanitary condition?
- 1) There was an accumulation of food debris/grime under/around prep counters or shelving units, along floor/wall joints, and in hard-to-reach areas in the kitchen including inside the walk-in freezer. Please conduct thorough cleaning. Pull equipment away from wall for easy cleaning.2) Cabinet doors in kitchen were contaminated with grime. Please clean.3) The ceiling grate above the dishwashing area was dusty. Please clean.
