- 1) Samosas are being re-heated in the hot holding unit. - All high risk foods must be reheated to 74C prior to being placed in hot holding at 60C or higher.- Do not use hot holding unit for reheating. Reheat in microwave or oven to 74C then place in a preheated hot holding unit at 60C or higher. **Samosas were discarded again due to inadequate temperatures. Explained to operator the expectations with reheating and hot holding. Will be returning for follow up to assess operators food handling practices.
