Operator stated that he forgot the test papers in his pant pocket at home. Ensure testing equipment use in the food establishment are stored in a location that is easily accessibility to all staff.

- Observed sushi being stored in one of the hot trays holding unit. Operator does not have a pH meter or pH records of sushi prepared in the facility.Provide applicable records and equipment to ensure foods are handled in acceptable manner.
