    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): 1. The facility requires a deep clean as food debris and grease was observed on the floors, walls, and on much of the equipment throughout of the facility. 2. Grease discarded from various cooking equipment was stored in two large pots near the back door of the kitchen waiting to be discarded in the grease receptacle. Discarded grease being stored in the facility may be an attractant for pests.
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.
      • F2.5E Equipment or materials not required for food related operations must be removed from the premises.
    • F2.7 Are there handwashing stations available and properly supplied?
      • Observation(s): Handwashing station in prep area did not have paper towel at the time of the inspection. Please replace paper towel roll so that employees may use this product to dry their hands.
      • F2.7C Handwashing station must be supplied with single-service product for drying hands.

    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): 1. Stand up fridge near the entrance to the storage area has a broken gasket and the door does not seal properly. The temperature inside of the refrigerator was 3.6 degrees Celsius during the inspection; however, the refrigerator is no longer in good working condition. 2. Grease discarded from various cooking equipment was stored in two large pots and one small plastic bucket on the floor of the kitchen. Along with creating a slip hazard, storing discarded grease in this way may attract various pests. The amount of grease observed indicated that these have been sitting on the floor for a significant amount of time without being discarded appropriately. 3. The facility requires a significant deep clean as food debris and grease was observed on the floors, walls, and the back of equipment throughout of the facility. The metal shelving in the stand up refrigerators had food residue on it, creating the potential for cross contamination and bacteria growth. Food contact surfaces near grills and on the prep line were generally free of debris.
      • F2.5A All equipment, utensils and food contact surfaces used on the premises must be kept in good working order to ensure the sanitary handling of food.
      • F2.5B The premises must be properly constructed and maintained in good, clean and sanitary condition.

      • Observation(s): Facility did not have test strips to verify the concentration of sanitizer was within legislative guidelines.
      • F2.1A Sanitizer test strips must be available for each chemical sanitizer used at the premises.

      • Observation(s): Kitchen area : Floors, walls, storage area ,and cook line require cleaning Downstairs : All empty boxes , papers and other items must be removed or stored properly
