- 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
- In accordance with Section 2.17 of the NS Food Retail and Food Services Code, exterior openings must be protected against the entry of pests. Examples include: i. filling or closing holes and other gaps along the floor, walls and ceiling; ii. solid, self-closing, tight-fitting doors; and iii. screen doors that open outward and are self-closing If windows or doors are kept open for ventilation or other purposes, the exterior openings must be protected against the entry of pests by means such as: i. screens (a screen size of 16 mesh to 25 mm (1 in.) is generally recommended); ii. properly designed and installed air curtains; and/ or iii. other effective means to restrict the entry of pests.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- In accordance with Section 3.3.3 of the Nova Scotia Food Services and Food Retail Code, you must store potentially hazardous foods at a temperature of 4 degrees Celsius or less. The stainless preparation cooler was observed at 10 C. The cooler contained juice boxes. Do not store potentially hazardous foods in this refrigeration unit until it has been serviced.
