    • F1.2 Are proper temperature controls maintained to ensure safe storage and display of foods?
      • Observation(s): 1.) Shelf cooler was not functioning sufficiently to keep potentially hazardous (sprouts, beans, tofu) food at or below 4 degrees C. Food temperature measured to be 17 degrees, which could allow for dangerous growth of bacterial species or toxin production, especially over time. 2.) Walk in cooler ambient temperature was measured to be 13 degrees C, which is higher than the required 4 degrees Celsius. 3.) Some foods were stored at ambient temperatures, measuring product temperatures higher than 4 degrees Celsius.
    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): More frequent cleaning of surfaces needed so as to remove food debris, oils and residue (ie. filth). This includes handles of appliances and working surfaces as well as behind and underneath equipment.
    • F2.6 Are the premises designed and equipped to ensure safe food handling?
      • Observation(s): Fluorescent bulb fixture should have a cover or individual sleeve covers to reduce risk of broken glass or mercury vapours in event of breakage.
    • F3.3 Are written food handling procedures (Food Safety Plan) current and available on site?
      • Observation(s): Written records of critical control points, monitoring steps and corrective actions should be available and in practice.
