- Wet used wiping cloths were stored on the counter.Clean wiping cloths were stored inside the sanitizer buckets.Ensure wiping cloths are completely submerged inside the sanitizer solution to prevent the growth of microorganism on the areas that are not submerged in the sanitizer solution.

- Serving tongs were stored in a compartment and on the counter at the front service area.The tongs were washed in the dishwasher and clean tongs were stored in an ice bath.Ensure serving tongs/utensils are stored in ice water between uses at 4°C or less, in hot water between uses at 60°C or greater, stored in a sanitizer solution at the correct concentration (100ppm Chlorine/ 200ppm QUATs), or continuously switch out serving utensils with new utensils.

- Fruit flies were noted feeding on uncovered food items in the display case in the front service area. The pest control record was reviewed and no indication of bugs on the report. The food items were discarded.Contact your pest control exterminator to eliminate the pest in the facility.Install fruit fly traps in the front service area.
