      • Observation(s): Handles and corners of cooler doors were dirty. All equipment, especially high touch surfaces, must be cleaned more frequently to maintain adequate sanitary operations and to reduce the risk of pathogen transmission. Please ensure that the handles and corners of cooler doors are cleaned at a frequency that maintains adequate sanitary operations.
      • F2.3C Clean in place warewashing procedures must provide sufficient washing and sanitizing action to remove contamination.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): One of the large dairy coolers in the front area of the facility had a loose gasket. The internal temperature of the cooler was still below 4deg.C. The potentially hazardous food within the cooler were also below 4deg.C. All coolers used on the premises must be kept in good working order to prevent future temperature abuse of potentially hazardous food. Staff is taking routine temperature records of all coolers and the operator informed the EHO that a new gasket has already been ordered.
