      • Walk-in-cooler is >4C (8C). Please ensure the cooler is at or below 4C at all times to ensure food safety.
    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Dishwasher is not in good repair. Please ensure dishwasher is fixed as soon as possible. In the meantime, dishes can be manually washed in the dishwasher and sanitized with 100 ppm of bleach solution.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • To check the correct concentration of chemical sanitizer, appropriate sanitizer test kits/strips should be obtained and stored for convenient use.

      • Numerous black rice like droppings from mice are noted at multiple locations in the kitchen area. Proper cleaning and then disinfecting of these areas must occur. In consultation with a pest control professional have measures are prepared, implemented and monitored to eliminate pest are required.

      • Hard to reach surfaces are unclean. Please have general cleaning at all these areas. Sanitize the areas, if required.
