      • Pest control records were not observed. Implement and maintain monthly pest control/check. Ensure records are kept for review during inspection.A checklist that can be used will be sent with this report. If the facility will be doing self-monitoring, pest traps should be set at the facility for proper monitoring.

    • 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
      • Back kitchen had a residential style mechanical dishwasher. The unit did not contain a NSF label. Please refer to manual to determine if the unit reaches 71C. If not, use a chemical sanitizer to achieve the final sanitize step. Front end had a two compartment sink and it was equipped with detergent and bleach. A small high temperature dishwasher was equipped with detergent, however, after a couple of cycles, the maximum hot water temperature was 65C. Please repair or replace the unit to ensure it reaches 71C at the dish level.
