- Bread in a tray was kept beside the hand wash sink.-The operator removed the tray-Please ensure that no food is kept beside the hand washing sink as splashing water can contaminate the food.

- The meat balls and the marinating sauce in the hot holding was at 52 C.- The operator turned on the dial.The temperature for meat balls and marinating sauce was then measured at 62 C.-Ensure that the temperature for food in hot holding is 60 C or greater and the meat balls are reheated at 74 C.
