    • 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following: (e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
      • The following must be addressed to prevent entry and movement of rodents into the food establishment: the gap at the bottom corner of the staff entrance door, opening at the bottom left of the three-compartment sink, hole in the wall under the microwave in the back prep area, and hold in the wall in the water filter closet.
    • 23(2)(b) Equipment used to cook, heat-treat, cool, store, display or freeze food must be designed to (b) control temperature, humidity, air flow and any other condition that is likely to have a detrimental effect on food safety.
      • Reach-in cooler un the Merry Chef measured an ambient air temperature of 9.5 degrees Celsius. All potentially hazardous food was moved to the walk-in cooler at time of inspection. Service reach-in cooler and do not use until it can maintain food temperatures at 4 degrees Celsius or below.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Rodent droppings observed in the storage area under the cold top prep coolers and on the bottom shelf under the back food preparation table. Clean and sanitize areas affected by rodent droppings. A dead rodent on a sticky trap was observed on the floor next to the Merry Chef. Dead rodent was discarded at time of inspection.
