   • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
     • Cloths in use for wiping countertops and food preparation equipment are not being stored in a sanitizing solution while preparation is taking place. Demonstration provided on the preparation of a 100 ppm bleach water solution using a 4L ice cream bucket (1/2 teaspoon undiluted unscented bleach per litre of water) and verified using chlorine test strips. The cloths were relocated to the sanitizer bucket following the demonstration.
