     • Accumulation of dust was observed on walk-in cooler fan grill. Conduct cleaning to affected area.

   • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
     • Cold holding units were at 4C or less except the small Coca Cola cooler. It was at >4C and missing a thermometer. The unit was holding opened items. Please ensure the cooler is also at 4C and place a thermometer if holding perishable items.Please have extra probe thermometers present in the kitchen. Reheating occurs using the stove. Good.

     • One metal strainer hanging was in poor repair and was discarded during the inspection.The sides of the cookline equipment had buildup of grease and food. The sides are due for cleaning. Additionally, the floor (especially the corner) had buildup of food and grease.Basement meat slicer had buildup of food underneath the blade and the surrounding area. The top view was clean. Please clean and sanitize.
