- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Queso was stored in a hot holding unit, however, this unit was not plugged in. Queso was measured at 50C. Operator was instructed to plug equipment in / turn on high and reheat sauce to 74C.A re-inspection will be conducted to confirm hot holding temperatures.In addition, cooked pasta that was stored in a plastic insert was sitting in a bucket of ice. Surface temperature was measured at 9C. Operator was instructed to add ice tray to the top of the pasta container to help keep high risk foods cold.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- A temporary hand-washing sink was available in booth; however, it was not easily accessible. Staff re-organized hand-washing set up.Cooler jug filled with warm water, liquid soap, paper towel and a catch basin were available. Staff handwashing and glove use was dicussed.For future events, it is strongly recommended to have a spigot or tap (on and off) style water tank, rather than a push button, as this allows a for hands-free flow of water.
