- Sausage, prepared at a central location, are reheated using a steaming stray. The items are reheated for 5 minutes on a timer. This was tested and the sausage being reheated only reached a temperature of 35 degrees Celsius. Food items are to be reheated to an internal temperature of 74 degrees Celsius. Reheating practices will require revision.
- 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
- The test strips that were available were warped and no longer able to read sanitizer resodial concentrations.
