    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • The sandwich prep cooler was not on at time of inspection, and some food items were stored within. Mayo based sauce was moved to a suitable refrigerator. PHI advised operators to not store any perishable food items in this cooler until it is at 4C or less.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • quat sanitizer is being used, ensure appropriate sanitizer testing strips are obtained to test the sanitizer strength before use.
