- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Egg storage cooler was not plugged in properly after it was cleaned. Internal temperature of eggs stored in the cooler was measured at 11.5C. - Some eggs discarded. Other eggs that were placed in the cooler later were moved to another cooler. - Please ensure coolers are properly plugged into power if unplugged.
- 16. Is the facility free of unapproved animals, vermin and/or insects (unless noted elsewhere), and maintained to prevent the entry or harbourage of pests?
- Observed a couple of drain flies in the back preparation area. - Please treat the drains/implement additional measures to eradicate the presence of flies.
