    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Two different spaghetti & meat dishes were being hot held on the stove top. One was at 67C and the other at 44C. Reheat to 60C.All hot holding at 60C. 10 to 15 minutes prior to serving you can cool down the food to ensure it is at adequate temperature for the children to consume.
