- A box of raw whole eggs was noted stored on a shelving unit located in the front retail area. The temperature of the eggs was measured at 20C. Staff did not know how long these eggs were left at room temperature. Food discarded.- Whole raw shell poultry eggs must be stored at less than 7C.

- Staff informed that when manually dishwashing at the 2 compartment sink the sanitizing step is not always occurring or that the soap and sanitizer are being mixed together.- Proper manual dishwashing procedures are: Wash with soapy water -> Rinse -> Sanitize -> Air Dry.

- The dishwasher rinse temperature was measured at 69C (at the plate), needs to be at minimum 71C. - Manually sanitize the dishware until a minimum plate temperature of 71C is achieved or a minimum temperature of 82C on the external rinse gauge.
