      • Mar 12/26:Chlorine sanitizer is now being used for sanitizing surfaces and dishware.- Chlorine sanitizer test papers are required.Feb 12/26:Quat sanitizer test papers are not available. Staff are not testing the strength of the Quat sanitizer solutions to ensure proper concentrations are achieved.

      • When manually washing dishware the sanitizing step is currently occurring first and then being rinsed off.- Proper manual dishwashing procedures are to: Wash with soapy water -> Rinse with plain water -> Sanitize -> Air Dry. The operator is to review with all staff.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Quat sanitizer test papers are not available. Staff are not testing the strength of the Quat sanitizer solutions to ensure proper concentrations are achieved.
    • 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
      • No handwash soap was available at the kitchen handwash sink. Corrected- Designated handwash sinks are to be supplied with soap and paper towel at all times.

      • The Food Handling Permit on display has expired.- Locate and post the current, valid Permit.

      • - Calcium/mineral buildup on the interior of the ice machine. - Requires cleaning.- The interior of the small preparation cooler has dried food spills. - Requires cleaning
