      • ***The knife block was discussed and was going to be removed. The knife block had areas that are uncleanable and cannot be maintained in a clean and sanitary condition. Knives can be stored on magnetic strips or in cleanable containers or drawers.
    • 21. Is the facility properly constructed and maintained in a state of good repair to allow for the safe and sanitary handling of food?
      • ***There was a small edging of pressboard present by the wall closest to the dishwasher. Discussed that it needed to be finished in a cleanable water resistant manner (painting would be acceptable).

      • Hand sink was not separate from the two compartment sink. There was only one faucet for the triple sink.Picture received of the second faucet installed for the dedicated hand sink.

      • The water temperature throughout all fixtures measured to be around 28°C. The operators stated that the water tank needs to be replaced. Ensure the hot water system is functioning properly to facilitate handwashing.
