- 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.

- 19(1)(c) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(c) that the surfaces and materials are durable, non-toxic and are easy to maintain, clean and sanitize;
- Observed a hole in the wall in the room outside the staff washroom. The wall must be repaired so that it is in good repair, smooth, non permeable and easily cleanable. In accordance with Section 2.3 of the NS Food Retail and Food Services Code, you must ensure walls and ceilings are constructed of finishes which are smooth, impermeable, and washable.
- 19(2)(b) A food establishment must provide all of the following in accordance with applicable legislation or as considered acceptable by the Administrator:

- Handwashing station at front not functional (faucets need replacement). Operator informed they are waiting on a part to repair the sink. Handwashing sink must be repaired.
- 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
- Bleach sanitizer in spray bottle measured too strong. A fresh sanitizer solution measuring 100 ppm chlorine was prepared at the time of inspection. Add 1/2 teaspoon unscented concentrated household bleach per litre water to prepare 100 ppm chlorine sanitizer.

- Quat sanitizer spray bottles measured 0ppm. Quat sanitizer spray bottles refilled at time of inspection and measured 200ppm.

- A few rodent droppings observed on the floor behind the soft serve ice cream machine and under the prep table. Clean and disinfect areas affected by rodent droppings.
- 34 An operator must ensure that a food establishment is operated so that all food and food ingredients are processed, manufactured, handled, prepared, packaged, served, sold, offered for sale or distribution free of charge, dispensed, displayed and stored in a manner that prevents contamination and adulteration.
- Raw ground beef observed stored above sliced onions/peppers in the reach-in cooler. Raw meat should be stored below ready-to-eat food to protect from contamination. Raw ground beef was moved to the lower shelf at time of inspection.
- 35(1) If directed by an inspector, a food establishment must have a quality assurance system in place that identifies, implements, monitors and verifies critical factors in the processing and preparation of food and that effectively prevents contamination or adulteration of food and ensures food safety.
- Written refrigeration and freezer temperature logs must be completed at least once daily and maintained onsite for review by the Public Health Officer.
