    • F2.3 Are food contact surfaces, utensils and equipment washed and sanitized in a manner that removes/prevents contamination?
      • Observation(s): F2.3D(1): Sanitizer solution in spray bottle measured greater than 200 ppm chlorine. Corrective Action: Discard solution. Prepare new sanitizer solution at 200 ppm chlorine residual: 5 mL unscented household bleach per litre water. Check with test strips. F2.3D(2): Sanitizer solution in open container measured at 300 ppm Quat residual. Ostro San product is intended for use at 200 ppm. Corrective Action: Discard solution. Prepare new solution at 200 ppm Quat (follow manufacturer instructions). Note: Chlorine and ammonia-based (Quat) sanitizers are incompatible. Do not combine or apply to the same surface.
      • F2.3D Sanitizer solution must be available and kept at the correct levels for adequate sanitizing action.
    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): F2.5K: Ice cream scoops are stored in sanitizer solution between uses. Dairy residue will deplete sanitizer. Scoops can contaminate product with residual solution. Corrective Action: After each use, process ice cream scoops as follows: • Rinse under running water to remove food residue • Immerse in sanitizer solution for 30 seconds • Rinse under running water to remove sanitizer and store in a clean, dry container; or allow to air dry in a clean, dry container In addition, scoops must be washed and sanitized, or replaced with clean ones, at least every four hours.
