- 19(1)(e) A food establishment must be located, designed, constructed and maintained to ensure all of the following:
(e) that there is effective protection to prevent the access and sheltering of insects, rodents and other pests.
- Observed rodent droppings on the floor behind the food tables, under the hot holding unit and out back near old equipment. Thoroughly clean areas where rodent droppings are seen.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Observed damaged and missing tiles under the hot holding unit. Replace damaged and missing tiles.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- Observed a greek style salad and sauce being left out at room temperature. Food items were discarded at this time. All hazardous foods must be stored at a temperature of 4C/40F or lower or 60C/140F or higher.
