      • The surface temperature of the pizza in the hot holding unit measured 55°C. The internal temperature of the pizza was 55.3°C.The hot holding unit was promptly adjusted and measured above 60°C.

      • Utensil was kept on the counter beside the pizza hot holding unit.A clean utensil was being used and kept in the hot holding unit.Ensure serving tongs/utensils are stored in ice water between uses at 4°C or less, in hot water between uses at 60°C or greater, stored in a sanitizer solution at the correct concentration (100ppm Chlorine/ 200ppm QUATs), or continuously switch out serving utensils with new utensils.

      • 1) The in-floor grease interceptor was installed lower than the kitchen floor, which allows debris to accumulate on uneven surfaces.A customized cover will be installed to make the floor leveled.2) There were no shelves in the walk-in cooler.Provide adequate shelving and store all foods at least 6 inches off the floor. Ensure shelves have adequate clearance below for cleaning.
