- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- There was no sanitizer solution available. There must be a sanitizer solution made readily available throughout the day to ensure food contact surfaces are sufficiently cleaned and sanitized. The operator made a bleach sanitizer solution at the time of the inspection and measured 100ppm.
- 05. Do food handlers refrain from handling food while ill and have acceptable attire and hygiene?
- Observed staff members handling garbage then handling food without washing their hands in between.Hand hygiene must be performed in between different tasks especially after touching garbage to prevent contamination of food contact surfaces and food directly. The operator was informed to wash their hands at the time of the inspection.
- 13. Are properly operating hand washing sink(s) accessible to food handlers, located in suitable areas, and stocked with appropriate hand washing supplies?
- There are no disposable paper towels available at the designated hand sink. The operators are using a cloth to dry their hands. Disposable paper towels must be used in a food establishment to perform proper hand hygiene. Reusing and sharing a cloth can harbor bacteria and result in contamination of the hands, further contaminating food being prepared. Obtain disposable paper towels and ensure it is installed in a proper dispenser.
