- 08. Do food handlers ensure that food is protected from contamination (unless noted elsewhere)(Non-Critical)?
- No - there was a large bag of onions (in a typical orange perforated onion bag) being stored directly on the floor in the rear kitchen area. Note that all food products are to be stored at least six inches (15cm) off the floor and onto racks, shelves, or pallets at all times.
- 11. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Critical)?
- Yes (corrected during inspection) - the commercial dishwasher was functional, with wash-cycle water temperature of 60 degrees Celsius (140 degrees Fahrenheit) and high-temperature hot water sanitizing rinse of 82 degrees Celsius (180 degrees Fahrenheit) for ten seconds. Note that staff are to ensure there is sufficient liquid detergent in the 'automatic feed' container, or are to add dishwashing detergent powder into the dishwasher prior to each wash cycle (corrected during inspection).Also, there was a set of large 3-compartment sinks for use for manual washing, rinsing, and sanitizing (with chlorine bleach available - with test strips provided). Note that sink drainage issues observed at time of inspection have been identified as a plumbing violation (with the issue to be corrected forthwith).

- No - there were issues with the plumbing at the set of 3-compartment sinks, with poor to no draining at any of the sink drains. The operator is to contact a plumber or other technician to investigate and correct the drainage issue and ensure there are no other piping/plumbing problems in the premises (including any possible city property issues).

- Yes (corrected during inspection) - the main kitchen area hand-wash sink was obstructed with electrical cords stored in the sink, and must be accessible at all times (along with a supply of liquid soap and paper towels). This was corrected at time of inspection.
