      • The stainless-steel stand-up refrigerator had an internal temperature of ~9C. This is too warm and must be maintained at 4C or colder.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • Facility uses food grade quat based sanitizer for food contact surfaces. It is mixed to 200ppm. There were no quat test strips available to test the sanitizer strength.

      • The sanitizing temperature of the mechanical dishwasher/sanitizing equipment was measured to be at about 64C at plate level (71C required) after running multiple cycles. Please contact a service technician, ensure the equipment reaches the required sanitizing temperature.
