- Cloths which are used to wipe the espresso machine's milk steamer were not in QUAT sanitizer solution. There was not a detectable concentration of sanitizer on the cloth.REQUIREMENT: Cloths must be immersed in sanitizer solution to ensure that equipment is being properly sanitized.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- Croissant filled with cooked spinach and ricotta cheese were probed and measured to be 21.1C. The croissants were kept inside a room temperature display case.Inspector ordered the croissants to be discarded.REQUIREMENT: Perishable food items need to be held with proper temperature control.
