    • 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
      • Cloths which are used to wipe the espresso machine's milk steamer were not in QUAT sanitizer solution. There was not a detectable concentration of sanitizer on the cloth.REQUIREMENT: Cloths must be immersed in sanitizer solution to ensure that equipment is being properly sanitized.
    • 10. Are food temperatures during storage and processing being controlled to maximize food safety?
      • Croissant filled with cooked spinach and ricotta cheese were probed and measured to be 21.1C. The croissants were kept inside a room temperature display case.Inspector ordered the croissants to be discarded.REQUIREMENT: Perishable food items need to be held with proper temperature control.
    • 12. Are there adequate and properly operating dish washing facilities to effectively clean and sanitize equipment and utensils (unless noted elsewhere)(Non-Critical)?
      • The facility did not have testing strips to verify the concentration of QUAT sanitizer.REQUIREMENT: Ensure that appropriate testing strips are readily available at all times.
