    • F2.5 Are the premises and equipment properly maintained and operated in a sanitary manner (i.e. ongoing maintenance)?
      • Observation(s): NOTE the following maintenance items to be addressed, as discussed: • Rear receiving door area ceiling and return air vents are due for cleaning, including any light fixtures and ceiling tiles in the cook-line, preparation and dishwashing areas. Most notable in the ceiling area above the hand sink and fire extinguishing equipment containers is coated with a mixture of dust. grease, and potentially mold. *[As discussed, retain a qualified professional to check and report whether there is evidence of cross-connection short circuit of the cook equipment ventilation exhaust with the HVAC fresh air intake due to proximity of the units on the roof. Improve or correct as necessary, as this has been an ongoing issue, particularly when road and salt dust from the highway in Spring is easily captured due to proximity of the HVAC air intake and roof cook-line exhaust vent.] • Owner advised the ceiling tile along the cook-line is scheduled for replacement. Ensure smooth, non-absorbent type ceiling tiles, rather than acoustic tile which is porous and difficult to keep clean. • The ice hold with open ice next to the pop dispenser should have a slider or cover to protect the ice from potential extraneous matter that could fall onto and contaminate the ice. • The ice cream fruit syrups containers should also be covered until required for dispensing. • The owner confirmed the walk-in cooler door seals are due for replacement, on order, to help maintain consistent temperature. This will ensure less wear on the compressor. **Pass-thru service and entrance areas: • the cushioned type flooring replacement has not stood up to be durable, so it should be replaced with a flooring that is smooth, tight, non-absorbent. Consult Corporate White Spot for flooring recommendation. Owner checking options. • the pass-thru hand sink requires a splash barrier on the left side, with new silicone caulking. **Dishwashing area: • require new silicone caulking along splash-backs and table edges. **Bar area: • As discussed, obtain an extra paper towel portable dispenser from your supplier for ease of use and accessibility for servers in the bar.
