    • 23(1)(a) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (a) protect food from contamination;
      • Light shield must be replaced in the light unit in the dry storage area.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Clean and sanitize all areas affected by mice. Mice droppings were observed behind the ice machine.
    • 29(3) A food establishment must provide facilities and equipment to implement the maintenance, cleaning and sanitation program and must identify in their program the cleaning and sanitizing agents used in the food establishment, including their concentration and uses.
      • Quat sanitizer in spray bottle measured too strong. Diluted to 200ppm at time of inspection. Follow mixing directions posted on the wall above the three-compartment sink or according to the manufacturer instructions on the bottle.

    • 23(1)(b) All equipment and utensils used to process, prepare, store, serve, sell or display food must be designed, constructed, installed and maintained to (b) allow adequate cleaning, sanitizing and maintenance.
      • Several cutting boards observed with excessive gashes/staining and are no longer easily cleanable.Cutting boards removed from use at time of inspection.
    • 29(2)(b) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done: (b) insects, rodents and other pests are controlled;
      • Rodent droppings observed on the floor under the three-compartment sink, at the floor/wall junction behind the stand mixer, in the bakery utensil storage containers, on the storage shelf below the deli slicer, on the deli slicer, on a food storage bucket in the dry storage room, and on the floor in the dry storage room.. Areas affected by rodent droppings were cleaned and sanitized at time of inspection.
