- Critical Inadequate Cooling & Refrigerated Storage of Potentially Hazardous Food(s)
- Butter (whipped) packets held at room temperature. Filled savoury pastries thawing at room temeprature, observed 20°C (removed from cooler an hour and a half ago).
- Store potentially hazardeous foods at 4°C or below. Corrected during the inspection and placed in cooler. Discard product held at room temperature more than 2 hours. Thaw savoury pastries in cooler before being placed in display cooler.
- Critical Improper Cleaning, Sanitizing of Equipment and Utensils
- No surface sanitizer at the time of the inspection, using orange cleaner in place of sanitizer.
- Prepare 200-400 ppm Quat solution, have available at all times. Corrected during the inspection.
- Improper Sanitary Facilities
- Handsinks obstructed in kitchen and in service area. No soap and paper towel available in kitchen. This is a repeat violation.
- Keep handsink access clean and stock with hot and cold water, soap, and paper towels. Corrected during the inspection.

- Rodent droppings observed in upstairs fridge area. This is a repeat violation.

- Wooden service counter observed to have dents/ scratches/ exposed wood on food contact surface.
- Repair/ resurface and seal wooden surfaces to ensure surfaces is readily cleanable and protected from moisture.

- Quats dispenser dispensing greater than 400 ppm. This is a repeat violation.
- Dilute sanitizer to 200-400 for sanitizer use. Corrected during inspection. Obtain test strips (Quats) to monitor concentration. Service dispenser so that dispensed concentration is 200-400 ppm. Comments Hot holding >60°C. Dishwasher 50-100 ppm chlor9ine, two-compartment sink available. Freezer =-18°C, coolers =4°C. Temperature logs maintained. FoodSafe level 1 certified staff present. Note: Upright cooler #3 (upstairs) maintained inconsistent temperature throughout unit due to overcrowding. Reorganize to allow for proper airflow and cooling.
