- OBSERVED EMPLOYEE DURING INSPECTION REMOVING RAW CHICKEN FROM METAL PREP TABLE, WIPE DOWN TABLE WITH SPONGE THEN PROCEED TO WIPE CLEAN FOOD PREP AREAS WITH SAME SPONGE. THEN PUT ON PLASTIC GLOVES AFTER TOUCHING CHICKEN AND CHICKEN CONTAMINATED SPONGE AND ENTER THE COOKS LINE. WHEN INSTRUCTED TO REMOVE GLOVES AND WASH HIS HANDS, HE PROCEEDED TO WASH HIS HANDS IN THE THREE COMPARTMENT SINK WHERE DISHES WERE BEING IMPROPERLY WASHED.MEANWHILE ANOTHER EMPLOYEE WAS OBSERVED WASHING THREE, RAW CHICKEN CONTAMINATED CUTTING BOARDS IN THE UTILITY MOP SINK. DISCUSSED AND REVIEWED MEANS OF CONTAMINATION WITH THE CERTIFIED MANAGER. CRITICAL CITATION ISSUED 7-38-005(A).
