- Observed 4 door prep cooler, at cook line, at improper temperature, 58.3F. Said cooler holds potentially hazardous foods. Cooler was tagged during inspection. Instructed manager that cold holding units must maintain proper temperatures; cold foods need to be held at 40F or lower at all times. Critical violation # 7-38-005 (A)

All said items were located in the 4 door cooler near the front cook line. Manager voluntarily discard and denatured a total of 54lbs of product, at a total value of $413.00. Instructed manager that potentially hazardous foods must be maintained to the proper temperature, 40F or lower for cold foods and 140F for hot foods. Critical Violation # 7-38-005 (A)
