     • Flour was observed being stored in black plastic bags inside the garbage bin.- Operator is to transfer food items to food-grade bags/containers.- Ensure plastic bags are verified as food-grade if used for food storage.

     • Observed employee work clothing hanging to dry over the food preparation sinks. The operator informed that clothing is washed in the 2-comp prep sink.- Immediately discontinue washing or drying clothing in the food prep sink and use the sink exclusively for food preparation.
   • 21. L'installation est-elle bien construite et entretenue en bon état de réparation pour permettre la manipulation sécuritaire et sanitaire des aliments?
     • 1. Water leak observed in the p-trap underneath the handwashing sink in the back area.- Repair the leak.2. Dirty cardboard liners were placed on the shelving units in the dredging (meat prep) area.- Please remove cardboard and use material that are smooth, nonporous and easily cleanable.3. Washroom door opening into the food handling area was not equipped with a self-closing device. - Please install.
