Comment nous déterminons la réussite ou l'échec : lorsque l'autorité sanitaire publie son propre résultat ou sa propre note (par exemple réussite/échec, une note en lettre ou une cote satisfaisante/insatisfaisante), nous l'utilisons. Sinon, nous examinons ce que l'inspecteur a constaté : une inspection comportant au moins une constatation à risque plus élevé — signalée comme critique par l'autorité, ou portant sur la température des aliments, l'hygiène des mains, les ravageurs, l'assainissement, la contamination ou les produits chimiques — compte comme un échec; une inspection ne comportant que des constatations à risque moindre (entretien, documents, formation) compte comme une réussite avec problèmes mineurs. Comme certaines autorités consignent de nombreux petits éléments à chaque visite, nous ne faisons jamais échouer un établissement en raison du seul nombre de constatations. Le taux de réussite est la proportion d'établissements inspectés dont la plus récente inspection a été réussie.
