- In the prep cooler,1)Cheese in the insert was measured between 6 to 7 degrees C.*Cheese was placed inside a working cooler by the operator.2)Donair meat was measured at 11 degrees C.*The Donair meat was discarded.-Ensure that the high-risk foods under refrigeration are maintained at 4 degrees C or less.

- No chlorine test strips were present.-Purchase valid chlorine test strips.
