- 04. Does the operator use approved methods for cleaning and sanitizing equipment, utensils, and surfaces?
- No sanitizer bucket was available at the cook line. Cleaning cloths were observed to be stored on the counter. A new sanitizer solution was prepared immediately upon request measuring 100ppm chlorine and the cleaning cloths were stored in the sanitizer solution.
- 10. Are food temperatures during storage and processing being controlled to maximize food safety?
- A large batch of chicken wings that was just finished the pre-cook was observed to be piled high into a large bin for cooling. The chicken wings were not being chilled rapidly. Upon request, the chicken wings were moved to several large pans and kept to 1 layer to allow for faster cooling. Ice baths were also recommended to the operator for faster cooling.Ensure high risk foods are cooled rapidly from 60°C to 20°C or less within twohours and then from 20°C 4°C or less within 4 hours.

- Chlorine test strips were not available for sanitizer testing. Chlorine test strips were ordered.
- 23. Is the facility maintained in a clean and sanitary condition?
- Some food debris spillage was observed under the cook line and prep coolers. Clean the above mentioned area.
