At time of inspection internal temperatures climbed from 45 degrees Celsius to 55 degrees Celsius indicating issue was not with hot holding unit but a reheating issue. Staff unable to inform EHO at what temperature food items were reheated to or when food items were moved from cooking side to hot holding side of rolling unit.

      • Observation (CORRECTED DURING INSPECTION): Undercounter cooler at front is measured to be 16.6oC air temperature. Food internal temperature is measured to be 16.5oC (corn dogs) and 16.4oC (previously frozen meat product). Indicator for cooler indicated at 62.9oF while staff read it as 12oF (-11oC). Temperature log indicated a temperature of 37.4oF (3oC) at 2pm check.
      • Corrective Action(s): Do not use cooler until cooler can maintain foods at 4oC or less. Foods discarded.
