- Observation (CORRECTED DURING INSPECTION): The sanitizer spray bottle at the front did not have any detectable sanitizer.
- Corrective Action(s): The operator refilled the sanitizer bottle with 200 ppm QUATS solution at the time of inspection. Ensure the sanitizer bottles are refilled timely to maintain adequate sanitizer concentrations.

- Observation: The food service area and the back area was very cluttered. The shelves had food debris and the floors around equipment/cabinets also had debris build-up.
- Corrective Action(s): Re-organize the back area to allow for safe access to the 3 compartment sinks and the stand-up freezer. Do not store office supplies/boxes in the area around the sinks as that can pose as a physical tripping hazard.
- The build-up of food debris can encourage pest activity and cause food contamination. Perform a thorough deep clean of the facility, reaching behind equipment and hard to reach areas to ensure sanitation. Date to be corrected by: Friday, February 12, 2021.

- Corrective Action(s): The operator poured out the water at the time of the inspection. Ensure appropriate chemicals are poured in appropriate bottles to prevent mix ups.

- Observation (CORRECTED DURING INSPECTION): 1)Sanitizer dispenser was not dispensing any sanitizing chemical. On-site staff were not checking sanitizer strength. Obtain test strips and check sanitizer strength at least daily. Keep Records. Have sanitizer dispenser repaired and in the meantime mix your sanitizer manually.
- 2) Worker was observed washing tongs that had fallen on the floor. She was rinsing with sanitizer only; not soaking. A sinkful of sanitizer should be prepared and items being sanitized should always be soaked in sanitizer for at least two minutes.

- Observation (CORRECTED DURING INSPECTION): Hot dog sausages were internally probed at 48.6C. Sausages were added approximately 1 hour ago.
- Corrective Action(s): Sausages were reheated to 74.0C for 15C, then reduced back down to 60C. Do not turn the dial too low, or it may not hold at 60C. It is your responsibility to monitor the temperature inside. EHO reviewed proper hot-holding practices and corrective actions with operator at time of inspection.
