    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: Observed fluorescent lights without protective covers within the chicken and fried food preparation area at time of inspection. Fluorescent lights without protective coverings are a physical hazard and can directly contaminate food products within the food preparation area.
      • Corrective Action: Operator to purchase and install protective safety covers for the fluorescent lights within the food preparation area.
    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: Observed scoops left in chicken breading product at time of inspection. Scoop handles must be kept free from the product to prevent hand contact and contamination.
      • Corrective Action: Operator to ensure all scoops used in food preparation are stored in a manner that prevents direct hand contact into bulk dried food ingredients during food preparation and while the premise is in operation.
    • 209 - Repeat Food not protected from contamination [s. 12(a)]
      • Observation: Observed various produce and prepackaged food items in plastic containers stored in non-food grade & cardboard containers within the walk-in cooler / refrigerator at time of inspection. Non-food grade containers and cardboard can permit bacterial growth in food products, increase the risk of potential sources of contamination contacting food products directly, which can result in potential foodborne illness
      • Corrective Action: Operator to remove cardboard and non-food grade containers from the walk-in refrigerator / cooler and ensure all food items prepared within the facility are stored in food grade containers within the refrigeration unit to prevent food bacteria growth and sources of contamination directly contaminating the food products.
    • 301 - Critical Repeat Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
      • Observation: Observed built up of dust and debris within the walk-in refrigerator ceiling fans, old food splatter on the walls and floors of the walk-in refrigerator and within the food preparation area. Observed a build up of dust, grease and grime on the deep-fryers' hood ventilation ducting and surrounding walls within the food processing area.
      • Corrective Action: Operator to remove all dirt and grease from the deep frying ventilation hood venting and surrounding walls, then thoroughly clean and sanitize the equipment and surrounding walls to prevent potential sources of contamination from directly contacting prepared food items. Operator to thoroughly remove all dirt, dust and old food debris from walk-in refrigerator, then thoroughly clean and sanitize all food contact surfaces within the walk-in refrigerator to prevent potential sources of contamination contacting food products within the cold-holding storage equipment.
    • 302 - Critical Repeat Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
      • Observation: (CORRECTED DURING INSPECTION) Inadeqaute active sanitizer detected in sanitizer containers or spray bottles at time of inspection. EHO tested spray bottle and automatic QUAT dispenser at the three compartment sink at time of inspection and only 50ppm QUAT was measured. (Public Health Significance) Sanitizing solutions must be strong enough to destroy bacteria on surfaces to prevent the contamination of staff, clients or food on contact with the improperly cleaned surface. Environmental health officer provided education on how to dilute QUAT sanitizer into spray bottles and sanitizing buckets with a solution concentration of 200 ppm.
      • Corrective Action: Change sanitizing solutions as required to always maintain an effective concentration (200 ppm unscented bleach, 200 ppm QUAT)- follow manufacturer's specifications)
    • 305 - Conditions observed that may allow entrance/harbouring/breeding of pests [s. 26(b),(c)]
      • Observation: Observed accumulation of waste products within the rear stock area. Observed a build-up of pop residue and food products on soda dispensing wall unit and floor area at time of inspection. Build up of waste debris, beverage residues within the locked rear stock area indicates that cleaning schedule is inadequate for the facility.
      • Corrective Action: Operator to increase cleaning frequency, monitor cleaning schedule of garbage waste, containers and old food residues within the rear stock area to ensure staff adequately and thorough clean and sanitize areas where food products are stored to prevent potential pests from entering and harbouring within the food premises.

      • Observation: Inappropriate storage scoops to obtain or move ingredients or product. (Public Health significance) - Scoop handles must be kept free from the product to prevent hand contact and contamination
      • Corrective Action: Operator to ensure all scoops used in the flour and / or breading products are stored outside of the product in a food grade container with the handles upwards to prevent hands directly contacting food products.
