What these findings mean

Health authorities word their violations differently, so we group them by what they mean for food safety. Higher-risk findings are the ones inspectors treat as critical, because they can directly make someone sick.

  • Cleaning and sanitizingHigher risk

Anything that touches food, such as cutting boards, dishes and utensils, must be washed, rinsed and sanitized. Inspectors check dishwasher temperatures, sanitizer strength and how wiping cloths are stored. Poor sanitizing lets bacteria survive from one use to the next.

Recorded once on November 17, 2015. For example: 8 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?

    • 8 - Are equipment, food contact surfaces and utensils washed, sanitized and stored in a manner that removes/prevents contamination?
      • Observation(s): a. At the time of inspection the quats sanitizer in the wipe cloth pail was at a very low detectable level. Staff reported that the sanitizer is replaced every two hours or when the water is visibly dirty. To ensure that the quats sanitizer is mixed to the correct concentration of 200 parts per million (ppm) the staff should test the concentration periodically when mixing. b. The quats sanitizer test strips at the mop station were expired in 2010, obtain new test strips for the facility. c. Staff are mixing the quats sanitizer directly from the concentrate bottle; the Diversey chemical dispensing system at the mop sink will dispense the quats sanitizer at the correct mix (if the system is set up correctly); at the time of inspection no sanitizers were being dispensed by the Diveresey system.
