- 29(1) An operator of a food establishment must have a maintenance, cleaning and sanitation program in place to control the risk of contamination of food, equipment, utensils and other facilities in the food establishment.
- Obtain a second plug/stopper for the three-compartment sink.
- 29(2)(a) A maintenance, cleaning and sanitation program must include procedures to ensure that all of the following are done:
(a) the food establishment and equipment are maintained, cleaned and sanitized;
- Clean floor under the deep fryers to remove grease and debris build-up; clean and sanitize the bottom shelf of the reach-in cooler to remove food debris build-up.

- Quat food-grade sanitizer was found below the required concentration. The solution was remixed to 200 ppm at the time of inspection. Ensure sanitizer is maintained at the proper concentration at all times.

- Pest droppings were found inside a flour food-grade container. The flour was discarded on site. The container must be thoroughly cleaned and sanitized before reuse.
