- In accordance with Section 2.17 of the NS Food Retail and Food Services Code, you must ensure exterior openings are protected against the entry of pests. Ensure the back door is closed. Sticky traps must be discarded as per the instructions provided.

(a) achieve the required food temperature as rapidly as is necessary to maintain food safety; and
- Repair refrigeration to ensure it can maintain 4C and lower.

- Clean and sanitize all areas affected by mice. Mice droppings were observed along the floors, underneath the hot-holding prep line, inside shelving units, and within the electrical wiring cubby hole. The entire facility must be given a thorough cleaning.

- High cockroach activity was observed within the facility. The operator must ensure that their licensed pest control company services the premises on a biweekly basis and treats for the presence of cockroaches.
- 33(1) An operator must ensure that the temperature of food is controlled so that the food does not deteriorate or become inedible or unsafe.
- In accordance with Section 3.3.3 of the Nova Scotia Food Services and Food Retail Code, you must store potentially hazardous foods at a temperature of 4 degrees Celsius or less. All potentially hazardous food products that had been stored in the unit for less than two hours were removed and placed in the walk-in cooler.

- Food grade quat sanitizer had to be remixed to 200ppm during inspection. Ensure the sanitizer is mixed daily and is tested with chemical test strips before use.

- Operator must ensure the two hand wash stations in each food preparation area are always equipped with liquid hand soap and single use paper towel. Liquid hand soap was replaced in the back hand wash station during inspection.

- Food handlers were observed not properly washing their hands due to the absence of hand soap at the facility. Hand soap was subsequently provided and installed at all handwashing sinks, and all staff were instructed to wash their hands immediately after the soap was made available.
